It’s that time of year again. The greengrocers are stocked up with blood oranges and our dehydrator is working overtime.
The challenging part, for us, is that the blood orange season is really short. By the end of October the blood oranges are scarce and poorer in quality. So, we have stocked up and René will be making Dipped Blood Oranges this week.
Blood oranges are the healthiest member of the citrus family. This is because they derive their name from their crimson tint, which is due to the presence of anthocyanins, a family of antioxidant pigments common to many flowers and fruit, but uncommon in citrus fruits. Also, one blood orange provides double the recommended daily intake of vitamin C. They are also a rich source of fibre.
Blood orange slices dehydrate really well, becoming crisp and tangy. And, once dipped, they balance our 54% dark chocolate perfectly.
You can see the whole production process in this article about Dipped Navel Oranges – the process is the same.
